Description
Bok choy is a type of Chinese cabbage. A pale green, sweet and delicate member of the cabbage family. Bok choy evolved in China, where it been cultivated since the 5th century.
The delicate leaves are dark green to light green and are crisp, smooth, and wide. Baby Bok choy is tender and crunchy with a sweet, fresh green flavour.
Nutritional Value
Raw bok choy is 95% water, 2% carbohydrate, 1% protein and less than 1% fat(table). Bok choy is an excellent source of vitamin C, vitamin K, vitamin A, and beta-carotene. It is a very good source of folate, calcium, and vitamin B6 as well. Bok choy was ranked #2 for nutrient density out of 41 nutrient-rich plant foods.
Storage
Try to use on the day of purchases as they don’t store well because of their high water content. Otherwise, store in a perforated plastic bag in the crisper of the fridge for 1-2 days.
